Scrambled: Fall flavors

In this week’s edition of Scrambled, Liam shares his recipe for Pumpkin Chip Muffins.

Hey Scrambled Readers!

Today I wanted to make something that reflected the fall season. The leaves have fallen and every yard is covered with them. So what would be better than a dish with pumpkin? Most people love the stuff, so I thought this would be a perfect ingredient.

As I was thinking, I also remembered an important part of fall, and Halloween for that matter: chocolate. Really, who doesn’t love chocolate?

But how to combine them … Cake? Ice cream? Pie? Soup? Muffins? Muffins! Oh, but how do I find a recipe that is sure to be good? I went searching through the cookbooks in my house and found this recipe. The original paper has tons of markings and substitutions on it, clearly showing that it has been made often and has been adjusted to perfection. After sorting through them I was able to decode this recipe:

Pumpkin Chocolate Chip Muffins

Mix in a large bowl:
4 cups all purpose flour
1 cup sugar
2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
2 Tbl. pumpkin pie spice

Beat together in a separate bowl:
4 eggs
2 cups (whole can) plain pumpkin
1/2 cup melted butter
1 cup applesauce

Combine the two and stir them together.

Add in 1 cup of chocolate chips and stir with a spoon until they are equally distributed.

Bake in 350 degree oven. Grease muffin tin or use baking cups. This makes the pans easier to clean.

Cook for 20-25 minutes

Make sure muffins are springy to the touch or they are not ready.

I fed my trial batch to The Madrigals, so feel free to ask one of them if you have any doubts.
