Scrambled: Surprise Cupcakes

Hello Scrambled readers! My name is Anna Hubbell. This year, Daly Place and I will be updating Scrambled every other week with creative and delicious recipes for you all to try! We are both juniors who love to cook and experiment with fun recipes, and now we can share our findings with our readers.

The other day, Daly and I were tasked with the job of making dessert for some of our friends. While brainstorming, the first thing we wondered was how we could make the dessert more interesting than the classics that always first come to mind. And we wondered how we could keep it easy.

Recently, we’ve had a lot of success using the website www.stumbleupon.com as a way to find innovative recipes for tons of different desserts. You never really know what you might “stumble upon,” but you can usually count on the fact that it will be sort of wacky.

One of the first recipes we found was for cupcakes with brownies inside, and we immediately thought it was a brilliant idea. We knew that this recipe would spice things up, but it would also be fairly simple. Cupcakes and brownies are already two of our favorite desserts, so combining them and adding cookies and cream frosting would only make them more irresistible.

Cupcakes: Brownie Surprise
Ingredients you’ll need:
2 sticks of butter
2 cups of confectioners sugar
1 box of cupcake mix
1 box of brownie mix
eggs (number depends on instructions from cupcake and brownie mix boxes)
10 Oreos

Cupcakes:
1. Mix up the brownie mix-follow directions and amounts on back of box.
2. Cook the brownies for about 7 minutes less than the box suggests. (You will know that they are done when you stick a toothpick in the brownies and the toothpick comes out with small pieces of brownie stuck to it).
3. Let the brownies cool for about 10 minutes.
4. While the brownies are cooling, mix up the cupcake batter. Again, follow directions and amounts on the back of the box.
5. Pour the cupcake mix into cupcake tins, but fill them about 1 ½ centimeters lower than the brim.
6. Once cooled, ball up the brownies and place them in the center of each cupcake.
7. Cook the cupcakes for the time given on the box.

Frosting: (Oreo Buttercream)
2 sticks of butter
2 cups of confectioners sugar
10 Oreos

1. Add butter to a bowl (we suggest heating the butter for 20 seconds in the microwave so it is easy to mix).
2. Add the sugar and mix until the frosting is completely smooth.
3. Crush up the Oreos so they are all about the size of a penny.
4. Mix the Oreos into the frosting.
5. Heat up the frosting for 10 seconds before spreading it onto the cupcakes

Spread frosting onto the cupcakes and enjoy!
