My mom makes these cookies every Christmas for the whole family. They’re quick and easy to make, so anyone can do it. Everyone looks forward to them each Christmas and Hanukkah.
Betsy’s Raspberry Thumbprints
Recipe:
1/2 cup (1 stick) softened butter
1/2 cup sugar
1 teaspoon vanilla
1 separated egg
1 1/4 cups sifted all purpose flour
2/3 cup chopped almonds (optional)
Raspberry jam
Directions:
Beat the butter, vanilla and egg yolk in a medium size bowl until fluffy. Stir in the flour. Then gather the dough into a ball, and chill the dough ball for several hours. Roll level teaspoons of dough into balls. Dip the dough balls into the slightly beaten egg white. Then roll the dough balls in the chopped almonds. Place the balls on an ungreased cookie sheet, one inch apart from one another. Make an indentation in the middle of every cookie with your finger, and fill the indentation with jam. Bake the dough in a slow oven at 300 degrees for 20 minutes or until lightly golden. Cool the cookies on wire racks. Enjoy!
