Every time I start getting used to cold weather and the fact that summer is over, mother nature throws us the curveball of a perfect sunny day. Although I can’t say that I’m excited about the cold days to follow, there are still some aspects of fall I can’t get enough of; food wise, it’s apples.
Last weekend we took our annual trip to Honey Pot Orchard in Stow. After hours of picking, conquering the corn maze and eating countless cider doughnuts, we left with bags of apples.
The great thing about apples is that they can be used in many ways. You can dip them, bake them or simply eat them plain. Here are my top three apple recipes.
3. Apple Pizza
Although this sounds strange, we baked apple pizza in our kindergarten class and it has been one of my favorites ever since. It has very different taste and I’ve found that people either love it or hate it. Regardless, this recipe is worth a try, trust me.
Ingredients:
1 package of ready-made dough
2 large apples, peeled and sliced
¼ cup of sugar mixed with 1 tsp. cinnamon
½- ¾ cup of shredded mozzarella cheese
cornmeal (if using a pizza stone)
Directions:
1. Grease pan with 1 tsp. oil or sprinkle cornmeal on pizza stone
2. Place dough on stone and spread with rolling-pin
3. Sprinkle shredded mozzarella cheese on dough
4. Layer apples on top
5. Sprinkle with cinnamon sugar
6. Bake for 18 minutes at 450 degrees
7. Let cool, and enjoy!
2. Pumpkin Apple Muffins
These muffins combine what I consider the cornerstone of a fall diet, pumpkin and apple. Perfect for freshly picked apples on a cool fall day.
1. Apple Crisp.
I’ve never been a huge pie fan, so apple crisp seems like the perfect substitute. I always bake at least one, especially for Thanksgiving dessert.
